Simple Steak Marinade

What you need:

Steaks (I used London Broil, but a roast can work too)
1 TBSP Mustard (any old yellow will do)
1 TBSP Worcestershire Sauce
1 TBSP Olive Oil
1 Tsp Minced Garlic
1 Tsp Wine (Red, White, whatever you've got) Apple vinegar will do if needed
1/2 Tsp Black Pepper

How to do it:

Mix everything together and generously coat the meat.
Broil, grill or pan sear to your liking.
I had a 2.8 lb steak that I broiled at 475* for an hour

Why it's good:

First off, they had london broil at my grocery store buy one get one free, so here I am with 4 lbs of steak and no recipe or idea what to do with them. It was 4:30pm and I had a hungry husband to feed so slow cooking was out of the question. I tenderized the meat for about 10 minutes with the nifty little device below. if you don't have one GET ONE!

Then whipped up the marinade, quartered some red potatoes threw in some sweet onion and in the oven it went. The steak literally fell apart on my fork. The mustard/ garlic combo is succulent and savory. It was an odd combination in the bowl but hey, it's all I had in the fridge. 2 thumbs up from the husband who, loved the onion and potato side dish that had absorbed all the drippings. YUMMY! Perfect Pot Roast

What you need:

4 1/2 lbs Beef Roast
2 cans Sliced Carrots
2 cans of Potatoes
1/4 cup Soy Sauce
1/4 cup Vinegar (i use rice, but apple cedar vinegar will work)
1/4 cup Olive Oil
1 cup Water
Salt and Pepper

How you do it:

Turn crock pot to high
Salt and pepper the meat and place in cooker
then add remaining ingredients
Leave on high for 5 to 6 hours
When ready take 1/4 cup of the cooking liquid to a separate pan and add 2 TBSP flour
Cook flour well then add remaining cooking liquid to pan for gravy

Why it's so good:

This is my absolute favorite pot roast. It's easy preparation and unique flavor is really quite perfect. The carrots, vinegar and soy sauce mellow into the beef broth that comes off the meet making for a savory gravy. The meat should be falling apart, the gravy will have a orange tint to it and the best part to can put everything in the pot and do what you have to do until it's time to eat.

Savory Barbeque Beef

What you need:

2 1/2 lbs of Beef Roast or stew beef (whichever is cheaper by the pound)
1 cup Ketchup
1/4 cup Soy Sauce
1/8 cup of Vinegar (I recommend either Apple Cider or Rice Vinegars)
1/8 tsp black pepper
1/4 tsp garlic powder
1/4 tsp onion powder
1/8 tsp cumin
1/2 tsp paprika
3 whole bay leaves or 1/4 tsp crushed bay leaves

How you do it:

Turn crock pot on high heat
Mix ingredients together in the crock pot
Add beef
Put on the lid and leave it
Cook on high for 3 to 3 1/2 hours
** the meat should be tender and the sauce should be a medium brown. After 3 hours check to make sure the meat isn't burning and switch to low until desired tenderness. The longer the better. Add more ketchup, soy and vinegar toward the end if you are running out of sauce. Add other seasonings as you see fit.

Why it's so good:

This is not your traditional southern bbq sauce, but it will not disappoint. The flavor is sweet and savory with the saltiness and tang of the soy and vinegar. The longer you leave it the more tender and flaky the beef becomes. Great over white rice but sinful over saffron rice. Mix it, set it and go about your business until it's time to eat. SO EASY, and SO GOOD!
